Ingredients
- 2 cups dry brown lentils rinsed
- 6 cups vegetable broth
- 1 cup canned black beans drained and rinsed
- 1 cup canned red beans drained and rinsed
- 1 tablespoon olive oil
- 1/3 cup onion chopped
- 2 garlic cloves minced
- 1/2 teaspoon oregano
- 1 can (28 oz) can crushed tomatoes
- 1 cup frozen corn
- 2/3 cup cilantro chopped
- 2 teaspoons garlic powder
- 1 Tbsp chili powder
Instructions

Place lentils and vegetable broth in a large pot. Gently simmer with lid titled for about 15 minutes.

While the lentils are simmering, add the oil to a saucepan and sauté the onion and garlic.

After the lentils have been cooked, add the onion and garlic mixture.

Add the chili powder, garlic powder, oregano, tomatoes, black beans and red beans.

Bring to boil and simmer for 10 minutes. Make sure you do not overcook the lentils or they will become mushy.

Sprinkle cilantro on top.

Optional: serve with light sour cream.
