Greek Yogurt Chicken Salad
Ingredients
  • 2 cups canned chicken
  • ½ cup diced red onion
  • ½ cup diced apple
  • ½ cup grapes halved
  • ½ cup dried cranberries
  • ½ cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • salt and pepper to taste
  • 1/4 cup slivered almonds *optional
Instructions
  1. In a large bowl, combine chicken, red onion, apple, grapes, dried cranberries, Greek yogurt, lemon juice, garlic powder, salt and pepper and *slivered almonds.

  2. Let chill or serve on crackers or sliced bread.

Ingredients
  • 1 can salmon drained, bones and skin removed
  • ½ bag (8 oz) whole-wheat Rotini, cooked
  • 1 ½ cup cherry tomatoes or 14.5 oz can diced tomatoes, drained
  • 1 small onion chopped
  • ½ cup canola oil
  • 1/3 cup lemon or lime juice
  • 1 garlic clove or ¼ tsp garlic powder
  • 1 head lettuce torn
Instructions
  1. Toss the pasta, salmon, tomatoes, onion in a large bowl.
  2. Mix in oil, lemon or lime juice, and garlic. Add salt and pepper to taste.
  3. Cover and chill for 15 minutes. Serve over lettuce.

Ingredients
  • 1 lata de salmon escurrido sin espinas ni piel
  • ½ bolsa 8 oz. de pasta rotini integral cocinada
  • 1 ½ taza de tomates cherry o 1 lata de 14.5 oz. de tomates picados y escurridos
  • 1 cebolla mediana picada
  • ½ taza de aceite de canola
  • 1/3 taza de jugo de limón o limón verde
  • 1 diente de ajo o ¼ cdta de ajo en polvo
  • sal y pimiento al gusto
  • 1 cabeza de lechuga picada
  • *opcional: 1 lata de maiz escurrido
  • **opcional: 1 ½ cucharadas de eneldo
Instructions
  1. Combine la pasta, el salmón, los tomates, la cebolla y el maiz* en un tazón grande.
  2. Mezcle el aceite, jugo de limón o limón verde, ajo y eneldo**. Añada sal y pimeinta al gusto.
  3. Cubra y deje enfriar por 15 minutos. Sirva sobre lechuga.

Whole Wheat Pasta with Diced Tomatoes and Salmon

Ingredients
  • 2 tablespoons oil
  • 1 medium onion chopped
  • 4 garlic cloves minced
  • 3 cups diced canned tomatoes low sodium, with juices
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 cans salmon drained and separated into chunks
  • 12 ounces whole wheat pasta
  • ¾ cup cheese grated
Instructions
  1. Heat oil in a large skillet over medium heat. Add onion and sauté until tender, about 5 minutes. Add garlic and sauté 1 minute.

  2. Add tomatoes and herbs. Reduce heat and simmer until mixture thickens, stirring frequently, about 20 minutes. Season to taste with salt and pepper.

  3. Cook pasta in a large pot of boiling salted water until al dente, stirring occasionally. Drain.

  4. Return pasta to pot. Add sauce and salmon. Toss to coat.

  5. Divide pasta among plates, sprinkle with cheese and serve.

Ingredients
  • 1 medium onion
  • 4 cloves garlic
  • 1 medium carrot
  • 1 tablespoon canola oil
  • 1 can (28 oz) crushed tomatoes, no salt added.
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon dried basil
Instructions
  1. Peel and rinse onion, garlic, and carrot.
  2. Dice onion. Shred carrot using a grater. Mince garlic.
  3. In a medium pot over medium heat, heat oil. Add onion, garlic, and carrot. Cook until onion is soft, about 3 minutes.
  4. Add basil, oregano, salt, pepper, and tomatoes. Bring to a boil.
